Mom was in town for Jamie and Johanna's house warming party, so we fired up the old woodstove. She made some foccacia and I made some regular bread. I tried to get her to weigh the ingredients as she assembled the foccacia, just for the sake of archiving, but it was no use, she just throws the "right" amount in at the right time. A dash, a scoop, whatever.... we'll never know. Anyway, I put a picture below...
As for my bread, I've been putting honey in every now and then and mom suggested malted barley syrup, which I happened to have on hand from some loaf I made about a year ago. The loaves came out pretty good and the barley syrup provides a nice rich undertone.
Starter:
  • 300g all purpose flour
  • 200 g whole wheat
  • 400 g sour starter
  • 1/2 cup powdered buttermilk
  • 800 g water
  • 1/4 tsp yeast

  • Dough:
  • 700 g all purpose
  • 150 g fine rye
  • 1/2 tsp yeast
  • 75 g barley malt syrup
  • 25 g salt

  • The old woodstove performed admirably. I finally put the hot top to good use too: while the breads cooked, I fried up some chicken thighs and also made quesidillas right on the stove top.
