I wanted to make a good wheat bread with flax and a bit of sour. I couldn't detect much sour flavor; I think I need to put more in there. I'll try putting equal amounts of sourdough starter and flour (at least) in the starter.
Starter:
  • 260 g all purpose flour
  • 260 g water
  • 195g sour dough starter
  • 1/2 tsp yeast

  • Dough:
  • 113 g all purpose
  • 403 g stone ground wheat
  • 175 g fine rye
  • 365 g water
  • 21 g salt
  • 82 g flax seeds

    The bread came out pretty dense, but soft (probably could have taken another 10 minutes or so in the oven).
