15 March 03: Karim

From the kitchen of Karim Batthish...
I was inspired to make French bread this morning - too many nasty comment about our brethren overseas this week so this is my bit for world peace. Somehow one of the loaves came out with an end that looked like a chicken butt.
Best one so far - of course, I can still say that of every loaf I bake. Slightly crispy crust, soft, elastic and airy interior. Still not quite the texture I'd say a great loaf should have. (I substituted a cup of unbleached white for another of rye; added nice brown flecks to the crust and very little change to the taste.)
