I am still trying to figure out the baguette in the home oven. This was the closest we've come.
Starter:
500 g all purpose flour
600 ml water
1 TB salt
1/2 fresh yeast cake
Dough:
500 g all purpose
1.5 fresh yeast cakes
1 TB salt
It had great crust that crackled when it came out, and ok chew. I need to find some better flour for this. I believe the French all purpose flour has more protein than our all purpose flour.
